Potato Pancakes

  • Small bag of  small to medium red potatoes
    • Shredded 
  • Salt
  • Pepper
  •  3 eggs, beaten
  •  4 tablespoons all-purpose flour
  • Peanut oil 


  • Grate onion and potato together in Cuisinart
  • Spread the potatoes on top of dish cloth
    • Roll and wring, extracting as much moisture as possible
    • Add to med-large mixing bowl
    • Salt evenly
  • In a separate bowl beat eggs, whisk in flour add (some) salt and pepper
  • Stir the mixture into the potato and other ingredients
  • In a large heavy-bottomed skillet over medium-high heat, heat until hot and add oil
  • Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties.
  • Brown on one side, turn and brown on the other – approx 3 minutes each side
  • Let drain on paper towel
    • Keep warm small toaster oven – serve together hot
