Rice Noodles
Make broth:
In large boiling pot, bring to boil:
- One large onion – chopped into larger pieces
- One clove garlic – finely sliced
- 4 x tblspn lemon pepper
- 1/4 cup red caldo de pollo – to taste
- 2 x lemons – juice
- Bunch of fresh oregano – stemmed
- Bunch of fresh basil
- Pepper – to taste
Make Noodles
In large mixing bowl:
- 2x package rice noodles (stick)
- 1/2-3/4 cup Pesto – to taste
Add boiling broth
Once the noodles are tender – options:
- Serve as soup dish
- Drain them and run them under cool water to stop the cooking – (use this method if the plans call for using the noodles elsewhere)
- Toss in Sesame oil to keep the noodles from sticking.
