Rice Noodles

Make broth:

In large boiling pot, bring to boil:

  • One large onion – chopped into larger pieces
  • One clove garlic – finely sliced
  • 4 x tblspn lemon pepper
  • 1/4 cup red caldo de pollo – to taste
  • 2 x lemons –  juice
  • Bunch of fresh oregano – stemmed
  • Bunch of fresh basil
  • Pepper – to taste

Make Noodles

In large mixing bowl:

  • 2x package rice noodles (stick)
  • 1/2-3/4 cup Pesto  – to taste

Add boiling broth

Once the noodles are tender – options:

  • Serve as soup dish
  • Drain them and run them under cool water to stop the cooking – (use this method if the plans call for using the noodles elsewhere)
    • Toss in Sesame oil to keep the noodles from sticking.
