Blue Cheese & Bacon Potato Salad

Feeds a party

  • 5 lb bag red potatoes
    • wash and peel half of each potato (for some potato peel in final dish)
    • dice potatoes in 1/2 x 1/2 inch pieces
  • 2 cups chopped celery
  • 2 cups chopped green onions
  • 1 package bacon – cooked & chopped
  • 1 small tub Greek yogurt
  • 8 oz crumbled blue cheese
  • 1 1/2 cups mayonnaise
  • 1/4 cup balsamic vinegar
  • Lemon pepper
  • Salt

Directions

  • Bring water to boil – cook potatoes
    • Add bullion cubes or caldo de pollo
    • Add diced potatoes
    • Cook for 12 minutes – should still be slightly rigid for salad texture

    1. Combine all dairy in one bowl
    2. Combine everything else in another
    3. Mix everything together for potato salad
