Egg & Bacon Cupcakes

  1. Cook bacon – almost all the way done  – leave a little fat on the ends – crispy in the middle
  2. Preheat large convection oven to 350F
  3. In cupcake tray, add piece of bread  – shove down, so it does not displace the egg later
  4. Add cooked bacon – better with more bacon
  5. Crack egg into each of the cupcake reservoirs
  6. Cook for 12-15 minutes (15 minutes was only slightly runny in my oven)
