Chicken Penne Pasta

Ingredients:

  • 4 chicken breasts cut into 1/3rds  (strips) – marinade in something good + soy sauce for a couple hours
  • Penne pasta – med-large box
  • Large onion diced
  • 2 yellow squash cut into 1/4 wedges
  • 3 large tomatoes – diced
  • 2-3 cups baby bell mushrooms  – sliced
  • Fresh basil – chopped
  • Fresh oregano – chopped
  • 1  container heavy cream – medium size
  • 1/2 cup Goat cheese (optional)
  • 1/2 cup Parmesan (optional)
  • 1/2 Avocado oil

Instructions:

  • Boil water, salt + required oil
    •  Cooke Penne pasta
  • Preheat large iron skillet
    • At last minute, when hot, add oil
  • Add chicken strips
    • Cook ~3 minutes on each side on medium-high heat
    • Remove and place in large mixing bowl
  • Add diced onion
    • Saute, remove and set aside with chicken
  • Add squash and mushrooms
    • Saute, remove and set aside with the cooked items
  • Add diced tomato
    • Wait until most of the moisture is gone – leave in skillet
  • Add entire container of heavy cream
    • Add chopped oregano and basis
    • Reduce
  • Salt/Pepper to taste
  • Add mix of sauteed ingredients
  • (Optional) add parmesan and goat cheese
  • Bring to simmer, turn off burner
  • Ladle sauce over bowls of pasta

 

 

Sear chicken strips and set asside
