Glazed Carrots – Three Recipes

Glazed Carrots – Ginger ale

  •     2 tbsp. unsalted butter2 lbs. carrots, peeled and trimmed
  •     2 tbsp. honey
  •     3 1/2 oz. ginger ale
  •     Salt and pepper

In saucepan heat butter. Add carrots and saute for 1 minute.
Add honey, salt, and pepper and toss well.
Pour in ginger ale and bring to a boil. Cover and cook 3 minutes.
Remove lid and cook until liquid turns into a glaze, about 5 minutes.

Honey-Glazed Carrots  – orange juice

  •     1 pound carrots cut into 1″ pieces at a angle
  •     1 cup water
  •     1/4 teaspoon salt
  •     1/2 cup orange juice
  •     2 tablespoons cornstarch
  •     2 tablespoon butter or margarine
  •     2 tablespoon honey

Cook carrot pieces in 1 cup boiling water with salt in medium saucepan 10 minutes or until tender; drain carrots, and place in a serving bowl.

Stir together orange juice and cornstarch in small saucepan until smooth.
Stir in butter and honey: cook over medium heat, stirring constantly, 4-minutes or until thickened.
Pour over carrots and toss to coat.

Glazed Carrots –  Coke

  • 6 c. sliced carrots (about 10 medium)
  • 1/4 c. firmly packed brown sugar
  • 1 tblspoon cornstarch
  • 1/2 t. salt
  • 2 T. butter, melted
  • 1/2 c. coca-cola

In saucepan heat butter. Add carrots and saute for 1 minute. Add salt and pepper and toss well.
Pour in coke and brown sugar and bring to a boil. Cover and cook 3 minutes.

Remove lid and cook until liquid turns into a glaze, about 5 minutes.
