Bacon-wrapped, Stuffed Top Sirloin Discs
Ingredients
- Costco pack – top sirloin
- ¼ cup Goat cheese
- ¼ cup Parmesan
- ¾ cup Greek Yogurt
- ½ onion chopped Onion
- Salt, peper or Caldo de pollo
- Pack of baby bell mushroom stems –sliced
- Avocado or other high temperature oil
- Package of bacon
- Flour
- Butter
- Milk
Steak preparation
- Preheat convection oven to 450 degrees – small convection works
- Heat iron skillet
- Precook bacon? For thicker bacon will need to precook slightly
- Cut small hole in side of steak cut largest space possible inside without breaking through walls
- Generously oil, salt and pepper both sides of the steak.
Mix ingredients – make stuffing
- Add all ingredients except mushroom caps
Stuff ingredients into steak
Wrap the steak with the bacon and secure with a toothpick.
- Ensure bacon is covering the hole before it’s secured
Cook the bacon wrapped steak
- Turn iron skillet on high
- Add high temp oil & butter (1:1 ratio) to searing hot iron skillet
- Sear bacon wrapped steak 90 seconds on each side
- Remove and place in oven for 10 minutes
- Allow to rest 5-7 minutes before serving
Steak Sauce
- Mushroom caps – sliced
- Butter
- Milk
- Flour
Directions
- Melt 3 tablespoon butter in skillet with steak drippings
- Sauté mushroom cap slices
- Sprinkle < 3 tablespoon of flour on mushrooms
- Add 2 cups of milk milk
- Salt + pepper to taste
- Reduce for a bit
