Top Sirloin on Iron Skillet

This is my favorite way to cook steak. It’s crispy on the outside and very tender on the inside.

For a medium cooked steak on a iron skillet with gas stove:

Ingredients

  • Safflower oil
  • 1 heaping tblspn of beef soup base
  • Finely ground seasalt
  • Freshly ground pepper
  • Costco pack of Top Sirloin
  • Iron Skillet

Directions

  • Mix ½ cup of oil and soup base – mix till slurry liquid
  • Cut steak into 3-4” x 3-4” squares
  • Turn in oil/soup base liquid
  • Put on flat surface and add pepper and small amount of salt to once side
  • Turn burner on high & preheat large iron skillet for 10 minutes – should be radiating heat
  • Take two forks or meat tenderizer
  • Flip, pepper, salt , tenderize
  • Add ½ cup of safflower oil and quickly add steak squares
  • Keep at highest heat on gas stove
  • ~1.5-2” thick = 10-12 min total –  5-6 on each side
  • Rotate at halfway through, but don’t flip until 5-6 minutes is reached on each side
