Tater Tots

Ingredients

  • 6 red, peeled potatoes
  • 5 cup hard cheese (hard + cheddar, or just cheddar fine), grated
  • 1 large onions, chopped
  • 2 tsp salt
  • Flour
  • tsp black ground pepper
  • olive oil to drizzle on top

Directions

  • Boil med-large pot of water –
    • Add 2 tblspon of butter
    • Add ½ cup of oil
  • Peel and boil whole potatoes until tender ~16 minutes
    • NOTE: if rounder potatoes, slice accordingly if using processor – see ahead
    • Remove from water and set aside to cool.
  • Preheat oven to 450F
  • Oil cookie sheet(s) – will probably take more than one – so potatoes do not stick
  • Peel and grate potatoes with large holed grater or food processer
  • Add to large bowl
    • Add cheese, onion salt and pepper and stir
    • Scoop up about 1 tbsp of the potato mixture into your hands and form into cylinders about 1 inch long.
    • Add flour until not so sticky – not so much the flour is not soaked in
    • Place on baking sheet and repeat until all mixture is used
  • Drizzle olive oil over the top of tater tots.
  • Bake for 15 minutes,
  • Flip them over – bake another 15 minutes OR until golden brown and crisp.
