Salmon Cupcakes

Ingredients

  • 4-5 strips bacon – crispy – save fat!!!!
  • 1/2 cup chopped onion
  • 2 eggs – beaten
  • 2/3 cup mayonnaise (2/3 cup Greek Yogurt)
  • 1/2 cup small diced mozzarella cheese 
  • 3 teaspoons Dijon mustard
  • 1 teaspoon natural sugar
  • 1/2 lemon zest or lemon pepper will do
  • 1.5 lb cooked salmon checked for large bones
  • 1  cup bread crumbs
  • 1/2 cup tablespoons grated Parmesan
  • Freshly ground black pepper
  • 1/2 cup vegetable oil (frying)

Directions:

  • Preheat Oven to 375F
  • In iron skillet
    • Heat bacon fat in a small saute pan over low heat.
    • Add the onions and cook until translucent. 
  • Mix the bacon, mozz. cheese, onion, egg, mayonnaise, mustard, sugar and lemon zest in a bowl.
  • Add the cooked salmon  mixing gently after each addition.
  • Form the mixture into 12 balls.
  • In a shallow dish, combine the bread crumbs, Parmesan, and pepper, to taste.
  • Coat the balls in the bread crumb topping.
  • Add to cupcake tray
  • Cook @ 375F for 20 minutes.
