Pozole Recipe

This is comparable to my aunt’s recipe – http://redcanoerealestate.com/pozole-carol-lynn-recipe/

I added a few things.. Might have Americanized a bit.

  • 2lbs Pork – cubed
  • Large can Hominy
  • Onion – chopped
  • Garlic – chopped
  • 3 medium lemons (juice)
  • 4 stalks celery -sliced
  • 3-4 sliced -Carrots
  • Large can “Hatch” red enchilada sauce
  • 1 cup brown rice
  • 2 tblspn  Caldo de Pollo
  • Fresh basil – 2 clumps
  • Fresh oregano  – 2-3 stems
  • One cup brown rice

 

In large pot:

  • Add onion, garlic, Caldo de pollo, Hatch sauce, celery, carrots, herbs and lemon juice to water – bring to boil
  • Cube, lightly flour and brown pork then add to pot.
  • Add cup of brown rice and Hominy to pot
  • Simmer for 30-45.
