Pozole Recipe

This is my aunt’s recipe

INGREDIENTS:

  • 1 pkg. thick pork chops or small pork roast
    • cut into small cubed pieces
  • 1 large onion, chopped
  • Garlic to taste
  • 1 gallon can of white hominy, washed & drained well (Juanita’s Mexican style hominy from Walmart)
  • 2 16 oz. cans red enchilada sauce, hot (Hatch is BEST or Las Palmas)
  • 1 16 oz. can red enchilada sauce, medium (Hatch is BEST or Las Palmas)
  • 2 tsp Menudo Seasoning Mix (Walmart, in Mex. Spices section)

 

DIRECTIONS:

  • Flour, salt and pepper pork. Brown in large skillet or in oven.
  • Brown onion and garlic; add to meat
  • Add hominy to meat – with fluid
  • Add enchilada sauce and menudo seasoning
  • Cook on top of stove for ~ 1 hour, or in crock pot for 3-4 hours on high
