Boiled Yucca

INGREDIENTS:

  • 1 large or two medium yucca roots – peeled and chopped into 1″ cubes
    • to peel, cut off end, stand upright on cutting board and use sharp knife
  • 1 large or two medium peeled onions
  • 2 entire heads of garlic peeled and separated
  • 3 large lemons
  • 1 tablespoon – lemon pepper
  • 1/2 tablespoon – pepper
  • 2 tablespoons – Caldo de Pollo or chicken soup base
  • 4-6 tablespoons of butter

DIRECTIONS:

  • Fill pot with water and add yucca root
    • Stir pot around, discard water
    • RefilL pot to 2″ of water over yucca
  • Add to pot:
    • 2 squeezed lemons
    • lemon pepper
    • pepper
    • Caldo de Pollo or chicken soup base
  • Quarter onion and wrap in foil with 2 tablespoons butter, add a little salt (if using two onions, wrap each seperately)
  • Wrap garlic cloves in foil with 2 tablespons butter, add a little salt
  • Bake garlic and onions at 350 for 30 minutes
  • Boil Yucca uncovered for 30-40 minutes until soft (like mashed potato soft)
  • Chop onions and set aside with garlic
  • Strain Yucca, in large bowl (or same pot) mash onion, garlic and yucca together.
  • with 3rd lemon, add half and add more to taste if necessary
  • Salt & pepper to taste
