Black Bean BBQ Soup
Have leftover ribs after your big weekend cookout? Make black bean, BBQ soup!!
I’ve done with with both:
- One rack of ribs, chopped individually + one smoked chicken breast – cubed
AND
- About the same amount of chopped brisket (add ½ up front, ½ later)
Start in slow cooker one slow cooker for (total time 5-6 hours)
- 2 bags of beans
- 12 cups of water
- 1 tablespoon beef soup base (don’t over-salt at first)
- 1.5 tablespoon caldo de pollo (don’t over-salt at first)
- 1 tablespoon pepper
- 1 tablespoon chili
- 4-5 stalks chopped celery
- Entire head garlic – finely chopped
- Entire large onion – finely chopped
- Chopped BBQ (ribs and/or brisket)
- Adding a little extra sauce doesn’t hurt
Check beans at about 4 hours to see if almost cooked
With one hour remaining of cook time, add the following
- 1lb fresh okra – chopped 1/2″ slices
- 1 can sweet kernel corn
- Additional salt, pepper to taste
