Black Bean BBQ Soup


Have leftover ribs after your big weekend cookout? Make black bean, BBQ soup!!

I’ve done with with both:

  • One rack of ribs, chopped individually + one smoked chicken breast – cubed


  • About the same amount of chopped brisket (add ½ up front, ½ later)

 Start in slow cooker one slow cooker for (total time 5-6 hours)

  • 2 bags of beans
  • 12 cups of water
  • 1 tablespoon beef soup base (don’t over-salt at first)
  • 1.5 tablespoon caldo de pollo (don’t over-salt at first)
  • 1 tablespoon pepper
  • 1 tablespoon chili
  • 4-5 stalks chopped celery
  • Entire head garlic – finely chopped
  • Entire large onion – finely chopped
  • Chopped BBQ (ribs and/or brisket)
    • Adding a little extra sauce doesn’t hurt

Check beans at about 4 hours to see if almost cooked

With one hour remaining of cook time, add the following

  • 1lb fresh okra – chopped 1/2″ slices
  • 1 can sweet kernel corn
  • Additional salt, pepper to taste
