Baked Mahi-Mahi

Baked Mahi-mahi recipe in small convection oven

Ingredients

  • 1 medium-sized fillet
  • 1 lemon – juice
  • some basil (fresh is better)
  • 2 tblspsn soy sauce
  • 1/2 cup – Juice from jalapeno or banana pepper jar
  • 2 tblspsn safflower or olive oil

Directions

  • Preheat convection oven to 400
  • Fit fish into heavy baking dish
  • In bowl mix together
    • Lemon juice
    • soy sauce
    • oil
    • pepper juice
    • basil
  • Pour on fish in baking dish
  • Ensure both sides are covered
  • Cook for 18 minutes
  • Let sit for 1-2 minutes before serving
